I love cookies "cobs" of the "mulino bianco", but I can not always find them at the grocery store so I decided to play them ... I've seen on the site of the mill white pore offering the recipe to make them at home but I've changed a bit eliminating eg margarine ... the results came very similar, the smell emanating from the box when you open them is identical to that of the package and the taste is delicate and rustic at the same time thanks to the crispness of the grains of corn meal ... I do not know how many 've eaten at breakfast in milk ... yummy!
RECIPE:
400 g flour 00
100 g of corn flour
1 egg
50 ml of milk
140 g of butter
150 g of sugar
1/2 tablespoon baking
a little bit of vanilla extract
pinch of salt
First beat the softened butter in a bowl with the sugar then add the milk and egg. have a plan of the two flours, baking powder, vanilla and salt and pour the mixture in the center. Mix all the ingredients until you have a smooth batter and place in the refrigerator for half an hour.
divide the dough in two and drafted a portion between two sheets of parchment paper (so it does not stick to the rolling pin) to derive a layer of 3 mm and with the molds (I star :)) and make cookies. Bake at 180 degrees for 15-20 minutes.

  • 5 melanzane medie
  • 300 g di riso
  • una decina di pomodorini ciliegini
  • 2 spicchi di aglio
  • olio extravergine di oliva q.b.
  • foglie di basilico q.b
  • sale q.b
  • cacio ricotta a piacere

risotto melanzane, pomodorini e cacio
A delicate risotto, good and fragrant ... as always my method for making risotto is not the classical one (ie grown in the broth) but I do boil and drain it al dente Finish cooking directly in the sauce: I can assure you that the result is great! I like it a lot more so because the grains remain more intact and you do not "stick" ... then everyone has his own preferences, so it is definitely much lighter and easier to digest;)
This risotto I find it adorable ... You?
Recipe for 4 people:
5 medium eggplants
300 g of rice
a dozen cherry tomatoes
2 cloves of garlic
extra virgin olive oil q.b.
basil leaves q.b
salt q.b
ricotta cheese to taste

Sauté the garlic in the oil, add the eggplant cut into cubes and season with salt and cooking them over medium heat for 15-20 min. Add the chopped tomatoes and a few leaves of basil and finish cooking for another minute. Meanwhile, cook the rice is done, then drain it al dente (reserving a little of the cooking water) and add it to the pan of sauce carrying out the firings, adding a few tablespoons of 'water that we kept aside. Finally I whipped it all with a few flakes of fresh ricotta cheese vaccine, also dusted over the plates before serving ... a real treat
